Apple Cranberry Crisp

Sweet apples and tart cranberries combine in this delicious, yet healthy, gluten-free dessert. Serve warm with ice cream for an extra-special treat!

Serves 6

Ingredients

  • 4 tart apples, cored and thinly sliced

  • 1 cup fresh or frozen cranberries

  • 1/4 cup whole cane sugar

  • 2 tbsp fresh lemon juice

  • 2 tbsp arrowroot powder

  • 2 tsp cinnamon

  • 1/4 tsp nutmeg

Topping

  • 1 cup Gluten Free Oats

  • 1/4 cup brown rice flour

  • 1/4 cup arrowroot powder

  • 1/4 cup whole cane sugar

  • 1/4 cup softened virgin coconut oil or organic butter

  • 1/2 cup sliced or chopped almonds (optional)

  • 1 tsp cinnamon

  • 1/4 tsp ground cardamon

Directions

Preheat oven to 375ºF. Place thinly sliced apples, cranberries, sugar, lemon juice, arrowroot, cinnamon and nutmeg into a medium-sized bowl and gently mix to combine ingredients. Set aside while preparing topping.

To make the topping, place all topping ingredients into a medium-sized bowl and mix well until crumbly.

Place apple mixture into a 9″ x 13″ pan and sprinkle evenly with topping.

Bake 25 – 30 minutes or until bubbly.
